One of my favorite things about fall + winter cooking is cozy casseroles that feel like comfort… but don’t require a ton of steps. This cheesy taco potato bake checks every single box. It’s warm, it’s flavorful, it’s budget friendly, and it’s one of those meals that makes the house smell amazing while it bakes.
And I love meals like this on a Friday because we’re usually tired by the end of the week, but we still want something fun. Nothing fussy. Nothing complicated. Just a good dinner that everyone wants seconds of.
This one is super customizable too. You can use any brand queso, switch the cheese, or add toppings after like sour cream or jalapeños. But the base is simple pantry staples: potatoes, ground beef, taco seasoning, and the end result feels like loaded nachos but in potato form.
Here’s how to make it:
Ingredients:
- 1 bag Yukon gold potatoes, halved/quartered
- 2 tbsp olive oil
- 2 packets taco seasoning (divided)
- 1 lb ground beef
- 1 cup shredded Mexican cheese
- 1/2 cup prepared queso (any brand you like)
Instructions:
- Preheat oven to 350°F.
- Toss halved potatoes with olive oil and 1 packet of taco seasoning. Spread on a baking sheet and roast for 30 minutes or until fork tender.
- Meanwhile, cook ground beef in a large skillet over medium heat. Add the remaining taco seasoning and stir to combine.
- Once cooked, mix in shredded cheese until melted.
- Add roasted potatoes to the skillet and gently stir it all together.
- Warm queso in the microwave, then drizzle over the top.
- Serve immediately.
