Air Fryer Parmesan Roasted Potatoes

These air fryer parmesan roasted potatoes are one of those side dishes that somehow go with everything. They’re crispy on the outside, soft in the middle, and full of flavor without being complicated. I love making these on busy weeknights because they feel a little elevated but take almost no effort. If you’re trying to make simple meals feel more intentional, this is an easy win.

The air fryer really does all the work here. Toss everything together, throw them in, and let them get golden and crispy while you focus on the rest of dinner. They pair perfectly with steak, chicken, or even eggs for breakfast. Plus, they’re made with ingredients you probably already have in your pantry.

Ingredients

  • Baby yellow potatoes, cut into fourths
  • Olive oil
  • Italian seasoning
  • Garlic powder
  • Grated parmesan cheese
  • Salt
  • Pepper

Instructions

Add the quartered potatoes to a bowl. Drizzle with olive oil and toss to coat evenly.

Season with Italian seasoning, garlic powder, salt, and pepper. Toss again.

Sprinkle in grated parmesan and gently mix until the potatoes are well coated.

Place the potatoes in the air fryer basket in a single layer.

Air fry at 400°F for 20 minutes, shaking the basket halfway through.

Serve warm and enjoy as an easy, crispy side dish.
